With the kids being 4, 2.5 and 7 months, I’m always looking for versatile, super easy meals to please the whole family and even better where I can add heaps of veggies without getting looked at sideways.
These pasties are perfect as the kids love to help which makes it more likely they will actually eat them.
I must credit this good old pastie to my gorgeous girlfriends who I meet at the park every week (you know who you are) and always listen to them talking about these great meals they cook for the family. Girls take note, I am inspired and I am cooking!
I’m not going to give you an actual recipe because you can use pretty much any combination you like.
Basically, I cooked off onion, added mince and browned, added veggies and a little chicken stock with a dash of soy sauce.
You can use any stock or sauce (worcestershire, oyster etc) or make them vegetarian, it’s just important that the mixture is quite dry before making up the pasties.
I use a whole sheet of puff pastry and halve it (into triangles) then let the kids help to roll them over and squeeze around the edges.
Brush with egg white or milk and pop in the oven until golden brown.
These are great to freeze too so once they are made up (and before the oven) wrap them in glad wrap and pop in the freezer for another day.
Tip! Once the mixture was cooked and before I added the stock I took some out and put it into the Thermomix for Van. I added a little water and some steamed sweet potato which made the perfect dinner for him too.
