My cheats way to make easy home made chicken stock.
There is no denying it. Home made stock tasted SO much better than anything you can buy at the supermarket. Some butchers are selling their own home made stock but I find that it is quite expensive compared to making you own.
For years I have turned my nose up at making my own stock as I thought it was too time consuming and tricky but with my cheats way, I make a batch just about every week.
The best chicken stock is made with a raw chicken carcass but there are other ways to make delicious stock without having to nip down to the butcher.
Our head chef at Beluga said that cooked chicken carcasses would also do the trick. After a roast chicken, throw in the carcass, including any remaining meat, potatoes or root veggies, cover with water and away you go! I also do the same when I buy a hot chicken.
I always use onion, celery, carrot, herbs, pepper corns and salt and will add as much or as little as I have in the fridge.
– place your chicken and veggies in a large pot
– cover with cold water
– bring to the boil
– scoop off foam
– simmer for 3 to 4 hours
– strain really well
