Your next foodie stop. Must Wine Bar.
It’s been a staple in the Perth restaurant scene for years. 17 years in fact!! When head chef and owner Russell Blaikey casually reeled off this statistic I was blown away. I think we can all take a moment to appreciate just how hard it is to run a successful restaurant in general, let alone an iconic one for 17 years. It’s an incredible achievement.
A few weeks ago Russell invited us to Must Wine Bar to taste his new menu and indulge in a few signature cocktails at the bar. It’s not often that I dine at a restaurant and love the whole experience, but this was one of those occasions. Delicious food, innovative cocktails, and great service.
When chatting to Russell about the changes at Must Wine Bar he said he wanted to give his restaurant a slightly more casual feel, a homely vibe, and he has hit the nail on the head. He’s moved away from the more traditional dining experience and has gone for a shared plate or communal dining experience which is the way he loves to eat at home.
His passion for using local, sustainable produce was a theme during the whole dining experience. Every ingredient is sourced and handpicked by Russell. Wherever possible, the produce is sourced directly from our local farmers.
From the charcuterie board that I have loved for many, many years (nobody does it like Russell) to the cauliflower fritters in the best gluten-free batter I have ever tasted, Russell has kept the old Must Wine Bar greats we have loved for so long and mixed it with delicious, fresh ‘real’ food you will fall for over and over again, but perhaps the best part?! They change and reprint the menu every day.
Must Wine Bar offer a Bistro lunch from Mondy to Friday, $45 for 2 courses and a glass of wine and they also have live music from 5.30pm on Sundays. Get in there, you won’t be disappointed.
