Ok, this may not be my healthiest recipe to date but I fricken love this. You may have noticed a Mexican theme running through a few of my recipes….. that’s because my parents owned, ran and dad was the chef at their Mexican restaurant in Nedlands.
I grew up on the stuff so I have a major soft spot for anything Mexican, especially when my parents are cooking.
In my opinion, this is as healthy as Nachos can get without compromising on what I love about them so much.
Meat free and gluten free, make them once and you will be hooked.
Top it with my guacamole for an added twist.
Rayne’s Nachos Salad.
– Mission corn chips (the best)
– Can of kidney beans
– Old El Paso Salsa
– Coon light and tasty cheese
Grill until golden brown and top with
– Iceberg lettuce
– Weight Watchers sour cream
