When it comes to dessert, I’m not a lover of cake. Even as a child I would request a big fruit flan or an ice-cream cake for my birthday. Now that I’m older, I just don’t like missing out.
When it comes to vanilla cupcakes I can’t help myself. For such a simple cake I can honestly say it’s the hardest recipe to crack. There’s nothing worse than a bad vanilla cupcake. Flaky, dry or when it has icing with no flavour, what a let down.
If you follow my Instagram account you might have noticed that it was Lux (4) and Van’s (2) birthday over the past 2 weeks. Making very sure that I didn’t shirk my mummy responsibilities I embarked on making birthday cupcakes for school.
I searched high and low for moist, delicious vanilla cupcakes and can hand on my heart say that these are some of the best vanilla cupcakes I have ever tasted.
They might not be the sugar free, dairy free calibre of my cooking escapades of late but hey, sometimes you have to mix it up! Granted they might not look the pretiiest but don’t judge me on presentation as they were gone too quickly to save any for a photo shoot.
